What are the additives needed to make molecular cocktails? The molecular additives depend on the molecular technique used. For instance, in order to serve a mojito  with a lime air, you’ll need soya lecithin, a natural additive derived from soy that allows you to convert liquids into mousses. To prepare a sphere of piña colada, you must  use calcium lactate and sodium alginate. All our kits include detailed instructions on how to master each technique. What's more, each texturing agent is pre-weighed and  dosed to ensure great results and save you time!
